New Zealand Angus Carcass Evaluation and Progeny Test - ACEPT 1996

SUMMARY
1996 Angus Carcass Evaluation and Progeny TestIn recent years there has been a shift in beef industry emphasis toward customer-focussed beef cattle production and breeding systems. Meeting customer requirements through improved meat quality characteristics can be achieved by selecting genetically superior animals, through management changes such as from pasture to grain-based diets, adoption of new post-harvest technologies, e.g. electrical stimulation or a combination of these practices. This report examines one of these avenues for improvement, namely the identification and selection of genetically superior Angus cattle.The New Zealand Angus Association in partnership with Wrightson N.Z. Ltd. have demonstrated a commitment to genetic improvement of Angus cattle for carcass and meat quality traits. Such genetic change can be achieved through selecting superior sires based on Estimated Breeding Values (EBVs). This document is the fourth annual Angus Carcass Evaluation and Progeny Test (ACEPT) analysis presenting EBVs for New Zealand and overseas Angus sires. All bulls evaluated in the ACEPT scheme are referred to as Angus Carcass Evaluated (ACE) bulls.Sires used in the ACEPT programme have some progeny finished on pasture, some progeny feedlot-finished progeny and some bulls have progeny finished separately on pasture and feedlots. The ACEPT analysis was performed so that bulls have EBVs based on progeny performance on pasture or on feedlot, or for those bulls with progeny finished on pasture and feedlots, two sets of EBVs are provided, one set for each finishing environment.

Pasture-based ACEPT Analysis

This document presents progeny test information for fifty one Angus sires, represented by their steer progeny bred in three successive years and finished on pasture in the North Island, on feedlots in the South Island. Some bulls had some progeny finished on pasture and some other progeny finished separately on feedlots. Thirty one new sires are represented in the 1996 ACEPT analysis. Participating ACEPT Angus sires were mated to synchronised Angus cows using artificial insemination. The cows and their progeny were managed under commercial beef cattle farming conditions.The evaluations of bulls for pasture use are based solely on the analysis from their pasture-finished progeny. To date, ACEPT sires have been analysed based on performance of their pasture finished progeny which have been slaughtered in ten separate mobs in the North Island over the years 1994 to 1996. Dates and locations of these steers are presented in Table Five.

Feedlot-based ACEPT Analysis

ACEPT sires were represented by feedlot finished steer progeny from which carcass measures were taken in 1993 and 1996. Feedlot finished steers from Te Mania Feedlot were slaughtered at PPCS-Belfast, Christchurch in July 1996. Steers finished at Five Star Beef Whakanui feedlot near Ashburton were slaughtered at Canterbury Meat Packers on eight separate dates in 1993 and 1996.

Sire trait leader list for pasture-evaluated ACE bulls

Bulls with evaluations based on pasture-finished offspring are eligible for entry to the trait leader list. Bulls with less than 10 pasture-finished progeny are not considered. A higher proportion of progeny of trait leader bulls are expected to achieve Asian market premiums than progeny of other bulls. Meat colour, fat colour and pH are the major determinants of eligibility for these premiums.Sire trait leaders are presented for ACEPT sires based on records from pasture-finished progeny only. Lack of market signals for carcass and meat quality traits of feedlot-finished cattle means that sires which will improve profitability of feedlot finishing operations could not be identified.

Table One provides Estimated Breeding Values (EBVs) for sires based on all ACEPT sired pasture finished progeny analysed to date. The EBVs are taken from combined records from ten mobs of steers that were slaughtered at Manawatu Beef Packers (1994, 1996), Richmond-Pacific (1994, 1995, 1996) and Wairoa Beef Packers (1995).
EBV
Estimated Breeding Value of the sire, in units of measurement of the trait.
No progeny/sire The total number of pasture-finished progeny evaluated per sire. Includes all six pasture-finished progeny mobs.
CWT Hot carcass weight recorded immediately after slaughter and dressing.
BCS Beef Colour Standard. Meat colour as assessed by Japanese beef grading standards Prepared as seven continuous standards ranging from 1 (pale pink) to 7 dark red. A lower EBV is desirable.
BFS Beef Fat Standard. Fat colour as assessed by Japanese beef grading standards. Obtained from visual colour appraisal, ranging from 1 (white) through to 7 (creamy yellow). Since white fat is more desirable, a lower or negative EBV for fat colour is desirable.
pH Ultimate muscle pH, -a measure of acidity. Values should be 5.5-5.6, with values greater than 5.8 leading to poor keeping qualities of the meat.
BMS Beef Marbling Standard. Marbling as assessed by Japanese beef grading. BMS is obtained subjectively with assistance from standard charts and ranges from 1 (little or no marbling ) to 12 (abundant marbling). A positive EBV is desirable.
EMA Eye muscle area (cm2) or rib-eye area measured between the 12/13th rib. A positive value is desirable.
FD Subcutaneous fat depth (mm) over the eye muscle taken between the 12/13 th rib. A lower or negative value is desirable.
ACE Trait leader sires are highlighted.
Trait leader sires must have at least 10 pasture-finished progeny to be eligible for inclusion in trait leader lists.
Trait leader sires are determined by percentage of progeny capturing Asian market premiums. Premiums are based on those offered by Richmond-Pacific for cattle entering the Asian beef programme.

Yield Yield (%) of meat relative to carcass weight as assessed by the Japanese multiple regression equation. A higher (more positive value) is desirable.
EMA Eye muscle area (cm2) or rib-eye area between the sixth and seventh ribs. A higher value is desirable.
BMS Japanese Beef Marbling Standard, obtained subjectively with assistance from standard charts, scored from 1 (low marbling) to 12 (very high marbling). A higher value is desirable.
BCS Beef Colour Standard, prepared as seven continuous standards from visual appraisal using 1 (pale pink) to 3-5 (very good)to 7 (dark). A lower (more negative) value is desirable.
BFS Beef Fat Standard, obtained from visual appraisal involving colour, lustre and quality of fat. The whiter fat has score 1 and the yellower fat has score 7 (creamy yellow). A lower value is desirable.
Firmness Based on handle, from 1 (inferior-soft) to 5 (firm-very good). A higher value is desirable.
Texture A visually appraised score of meat texture from 1 (inferior-coarse) to 5 (very good-fine). A higher value is desirable.
Note: Some measures of eye muscle area and Japanese yield percentage were not recorded on progeny of 1996 ACE sires so EBVs are not provided.

Inter-musc fat A measure (mm) of seam fat thickness (between the two muscle layers) at the sixth and seventh ribs, about one-third of the way around the side. A lower (more negative) EBV is desirable.
Subcut fat Subcutaneous fat thickness (mm) between ribs 6 and 7. A lower (more negative) EBV is desirable.
Rib thickness Total carcass wall thickness, except for subcutaneous fat , between ribs 6 and 7, about half way round the side. A lower EBV is desirable.
Muscle score Subjective score from 1 (inferior) to 50 (excellent) based on visual appraisal of the hindquarter (high value cuts) muscling. Not a Japanese criterion. A higher (more positive) EBV is desirable.
GR Tissue depth (mm) taken on the hot carcass between the 12th and 13th rib on a line between the hip and the shoulder. A lower EBV is desirable.
C fat depth Fat depth (mm) over the eye muscle between the 12th and 13th rib. A lower EBV is desirable.
pH Ultimate muscle pH, a measure of muscle acidity. Values should be 5.5 to 5.6, values above 5.8 lead to darker beef and poorer keeping qualities.
Average Average measurement adjusted for the effect of farm, date of slaughter, and weight of the carcass (as a covariate).
Covariate Change in the average per kg increase in carcass weight.
Std Dev. Estimated standard deviation of measured performance.

BACKGROUND

On-farm management

Sires were mated to synchronised Angus cows using artificial insemination. These cows were managed under commercial farming conditions on a number of properties located from Gisborne to Southland. Calves were individually identified at birth enabling their growth rate, carcass and meat quality measures to be traced back to their sire.

Mobs and their slaughter dates
Sires in the ACEPT programme have been represented by steers slaughtered in ten pasture-finished mobs in the years 1994 to 1996 and in nine feedlot finished mobs in the years 1994 and 1996. Three mobs of cattle numbering 19, 12 and 9 steers originating from Ramoe station, Hawkes Bay were slaughtered at Richmond-Pacific on 12 March, 1 May and 21 May 1996, respectively. Ten steers from Papanui Station, Wellington were processed at Manawatu Beef Packers AFFCO, Feilding 18 November 1996. Sixty seven steers finished at from the Te Mania feedlot, Ashburton were slaughtered at PPCS, Belfast near Christchurch on 22 July 1996. These feedlot finished steers originated from three South Island properties, namely from J. Cottier, Winford Hills, W. Rurtherford, Montrose and Te Mania Angus, Parnassus. Twenty steers finished at the 5-Star Beef Whakanui feedlot near Ashburton were slaughtered on four separate dates, namely 21 August 1996 (14 steers), 12 September, 1996 (4 steers), and one steer slaughtered on each of 4th and 7th October. The distribution of progeny according to their date and location of slaughter in addition to their property/feedlot of origin are shown in Table Five.

Sires used
To date, 51 Angus sires have been evaluated in the ACEPT programme, represented by a total of 551 progeny. This document presents progeny test information for all 51 Angus sires based on the performance of their pasture finished and feedlot finished progeny. All but two of the sires were New Zealand bred. Sires were nominated for entry into the ACEPT programme on the basis of their own genetic merit (based on Group Breedplan EBVs) and visual inspection by New Zealand Angus Association representatives. Details of number of ACEPT progeny per sire for pasture and feedlot finishing environments are shown in Tables Six and Seven respectively.
